Tak\u017ee to sv\u00e9 obl\u00edben\u00e9 si m\u016f\u017ee vychutnat ka\u017ed\u00fd z n\u00e1s. Hodnocen\u00edm v\u00edn se v dne\u0161n\u00ed dob\u011b zab\u00fdv\u00e1 mnoho lid\u00ed. Jak by ov\u0161em dne\u0161n\u00edm profesion\u00e1ln\u00edm i amat\u00e9rsk\u00fdm degust\u00e1tor\u016fm chutnalo v\u00edno na\u0161ich p\u0159edk\u016f? V\u00edno z d\u00e1vn\u00e9 minulosti? T\u0159eba takov\u00e9, kter\u00e9 pili lid\u00e9 ji\u017e v dob\u011b 8 tis\u00edc let p\u0159ed Kristem, kam dle odborn\u00edk\u016f jeho historie sah\u00e1? Bylo by shled\u00e1no chutn\u00fdm a kvalitn\u00edm i z dne\u0161n\u00edho pohledu? To je ot\u00e1zka! A jak ho tenkr\u00e1t d\u00e1vn\u00ed vina\u0159i vyr\u00e1b\u011bli, jak\u00e9 do n\u011bj p\u0159id\u00e1vali ingredience, jak\u00fdm zp\u016fsobem ho konzervovali a skladovali?   Prastar\u00e9 receptury O v\u00edn\u011b m\u016f\u017eeme \u010d\u00edst v Bibli, ale i jin\u00fdch star\u00fdch p\u00edsemn\u00fdch pramenech. Ale i jinde. V n\u011bkter\u00fdch starov\u011bk\u00fdch chr\u00e1mech jsou receptury na v\u00edna naps\u00e1ny p\u0159\u00edmo na zdech. Nap\u0159\u00edklad v Egypt\u011b (Edfu a Philae). Dozv\u00edd\u00e1me se z nich, \u017ee do v\u00edn tenkr\u00e1t p\u0159id\u00e1vali m\u00e1tu, citronovou tr\u00e1vu, sko\u0159ici, r\u016fzn\u00e9 prysky\u0159ice nebo t\u0159eba \u010dajovn\u00edkovec (rooibos). I p\u0159esto, alespo\u0148 dle dne\u0161n\u00edch odborn\u00edk\u016f, pr\u00fd moc lahodn\u011b nechutnala. Nap\u0159\u00edklad v Bibli je uvedeno, \u017ee jedno v\u00edno v \u201ez\u00e1v\u011bru\u201c chutn\u00e1 jak zmij\u00ed u\u0161tknut\u00ed!  R\u016fzn\u00e1 kvalita a r\u016fzn\u00e9 p\u0159\u00edm\u011bsi Jako je tomu dnes, tak i ve starov\u011bku rozd\u011blovali v\u00edna podle kvality. Kvalitn\u011bj\u0161\u00ed, jakostn\u00ed, ur\u010den\u00e1 pro vy\u0161\u0161\u00ed vl\u00e1dnouc\u00ed vrstvy. A pak ta druho\u0159ad\u00e1 pro ostatn\u00ed. Ta byla vyr\u00e1b\u011bna \u0159ed\u011bn\u00edm mo\u0161t\u016f nebo ze zbytk\u016f po lisov\u00e1n\u00ed. Starov\u011bc\u00ed vina\u0159i p\u0159ipravovali tak\u00e9 hodn\u011b sladk\u00e1 rozinkov\u00e1 v\u00edna lisovan\u00e1 z usu\u0161en\u00fdch hrozn\u016f. Tento n\u00e1poj byl dost hust\u00fd a lepkav\u00fd. Ne\u017e se provedla fermentace, sm\u011bs je\u0161t\u011b va\u0159ili. Svou konzistenc\u00ed v\u00edno p\u0159\u00edli\u0161 nep\u0159ipom\u00ednal, sp\u00ed\u0161 sladkou ka\u0161i. P\u0159ed pod\u00e1v\u00e1n\u00edm do tohoto v\u00edna p\u0159id\u00e1vali je\u0161t\u011b su\u0161en\u00e9 ovoce a med. Nen\u00ed divu, \u017ee se muselo \u0159edit vodou. N\u011bkdy ov\u0161em \u00fadajn\u011b slanou mo\u0159skou! Do n\u011bkter\u00fdch v\u00edn p\u0159id\u00e1vali bylinky, aby bylo zdrav\u011bj\u0161\u00ed. T\u0159eba \u0161alv\u011bj, tymi\u00e1n, km\u00edn, m\u00e1tu, mandragoru nebo aloe. Zkr\u00e1tka v\u011bt\u0161ina tehdej\u0161\u00edch v\u00edn by n\u00e1m dnes pravd\u011bpodobn\u011b v\u016fbec nechutnala! Zvl\u00e1\u0161tn\u00ed konzervanty Tenkr\u00e1t pou\u017e\u00edvan\u00e9 konzerva\u010dn\u00ed l\u00e1tky a postupy se od t\u011bch dne\u0161n\u00edch tak\u00e9 dost li\u0161ily. V\u00edno bylo skladov\u00e1no tak, \u017ee k n\u011bmu m\u011bl p\u0159\u00edstup vzduch. A t\u00edm p\u00e1dem t\u00e9\u017e ne\u017e\u00e1douc\u00ed bakterie, kvasinky a pl\u00edsn\u011b. Rychle se kazilo. Sudy konzervovali s\u00edrou a amfory s\u00e1drou.
